Beat well, sprinkle one cup of flour over the top and put in a warm place to rise. Then roll out into a square, about one-finger thick. Spread the square with the 2 oz. of butter, beaten until white. Sprinkle with the dried currants and dried fruit. Fold the dough into an envelope and roll lightly. Then roll the dough up, and curve into a crescent. Put on buttered baking sheet, let rise again. Sprinkle with sugar crystals and bake in medium oven (about 350 \u00b0 ) for about 25 minutes. Lower temperature to 300 \u00b0 and bake for another 20-25 minutes.<\/p>\n<p><strong>SAND COOKIES<\/strong><br \/>\n<em>Sm\u0117liniai sausainiai<\/em><\/p>\n<p>2 cups flour<br \/>\n4 oz. butter or margarine<br \/>\n1 egg white<br \/>\n2 Tbsps. powdered sugar<br \/>\nTo sprinkle on top:<br \/>\n1 Tbsp. sugar<br \/>\n1 tsp. cinnamon<br \/>\n1 egg<br \/>\nPut all dough ingredients into a bowl and knead them together. Then chill to set the dough. Roll out to a thickness of 1 \/ 8 inch and cut out various shapes of cookies. Brush top of each cookie with beaten egg and sprinkle with sugar and cinnamon. Bake in a hot oven until golden. Remove from baking sheet when<\/p>\n<p>slightly cooled, they will then be less brittle.<\/p>\n<p><strong>MUSHROOM COOKIES<\/strong><br \/>\n<em>Grybukai<\/em><\/p>\n<p>2 cups flour<br \/>\n\u00bd cup honey<br \/>\n\u00bd cup sugar<br \/>\n1 egg<br \/>\n2 Tbsps. butter<br \/>\n\u00bc tsp. baking powder<br \/>\n\u00bc tsp. ginger<br \/>\n\u00bc tsp. allspice<br \/>\n\u00bc tsp. cinnamon<br \/>\nHandful of poppy seeds for decorating<br \/>\nSugar glaze:<br \/>\n1 cup powdered sugar<br \/>\n\u00bc cup milk<br \/>\nMix together until very smooth In small saucepan, slowly heat together sugar and honey until sugar is dissolved; set aside. Sift together flour, spices and baking powder. In bowl of electric mixer, place honey mixture, add egg and mix well. Use dough hooks or mix in the dry ingredients by hand. Dough will be stiff. Roll dough into walnut-sized balls for mushroom caps and make matching stem-like short coils. Press caps down on one side to make them flat and place on slightly greased baking sheet. Press ends of stems flat also. Bake caps and stems at 350 \u00b0 for about 10 minutes. Cool. To attach stems to caps scoop out a small indentation the size of the stem top and glue stem into cap with glaze. Tops of mushrooms can be glazed lightly with the same glaze and sprinkled with poppy seeds.<\/p>\n<p><strong>COOKIE SLICES<\/strong><br \/>\n<em>Piaustyti sausainiai<\/em><\/p>\n<p>6 eggs<br \/>\n1\u00bd cup sugar<br \/>\n1 cup butter<br \/>\n7 cups flour<br \/>\n3 tsps. baking powder<br \/>\n1 tsp. vanilla<br \/>\n1 cup chopped nuts<br \/>\n\u00bd tsp. ground cardamon<br \/>\nCream butter and sugar, add eggs one at a time. Beat well. Sift in flour and baking powder. Add vanilla, cardamon and nuts. Divide dough into four sections. Shape each one into a roll about 2 inches in diameter. Bake about \u00bd hour in 400 \u00b0 oven. Remove from pan. While still warm, cut into \u00bd -inch slices. Reduce heat to 250 \u00b0 . Place slices on cookie sheet, continue baking until dry and light brown.<\/p>\n<p><strong>SUGAR COOKIES<\/strong><br \/>\n<em>Cukraus sausainiai<\/em><\/p>\n<p>1\u00bd cups sugar<br \/>\n1 cup butter (or margarine)<br \/>\n2 eggs<br \/>\n1\u00bd tsp. vanilla (or less)<br \/>\n3 cups flour<br \/>\n\u00bd tsp. salt<br \/>\n3 Tbsps. dairy sour cream<br \/>\n\u00bd tsp. baking soda<br \/>\nAdditional sugar<br \/>\nCream together sugar and butter until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Sift together flour and salt; set aside. Stir baking soda into sour cream. Alternately mix dry ingredients and creamed mixture, blending well after each addition. Chill dough. Roll dough onto floured board to 1 \/ 8 &#8211; \u00bc inch thickness. Cut into desired shapes with cookie cutter. Place on slightly greased baking sheet. Sprinkle with sugar.
