Add and beat eggs one at a time. Mix flour with salt, baking soda, and baking powder; beat into egg mixture. Add apples, nuts, and dates or raisins. Bake in a greased 9\u201d x 12\u201d x 3\u201d pan at 350 \u00b0 F for 40-45 minutes.<\/p>\n<p><strong>APPLE AND PRUNE COMPOTE<\/strong><br \/>\n<em>Obuoli\u0173 ir d\u017eiovint\u0173 slyv\u0173 kompotas<\/em><\/p>\n<p>1 lb. apples<br \/>\n\u00bd lb. prunes<br \/>\n1 cup sugar<br \/>\n4 cups water<br \/>\n5 cloves, cinnamon, orange peel<br \/>\nPeel apples, cut lengthwise into sections, core, and put immediately into boiling sweetened water. Cook over a low heat, together with all the spices. When apples are done, remove from liquid and put into serving dish. Strain the liquid, add remaining sugar, bring to a boil, and let stand to settle. Cook prunes separately, remove from liquid, and place attractively over the apples. Pour apple syrup carefully over the fruit. Leave out the sediment. Serve cold.<\/p>\n<p><strong>APPLE PUDDING<\/strong><br \/>\n<em>Obuoli\u0173 kisielius<\/em><\/p>\n<p>5 sour apples<br \/>\n1 cup sugar<br \/>\n4 Tbsps. potato starch<br \/>\n4 cups water<br \/>\nJuice of \u00bd lemon<br \/>\nWash apples, cut up and cook in water. Force through a sieve. Add sugar and bring to a boil. When it boils, stir in dissolved potato starch, bring to a boil again, and pour into a mold. Serve chilled, with milk or cream.<\/p>\n<p><strong>APPLE UPSIDE DOWN CAKE<\/strong><br \/>\n<em>U\u017ekepas su obuoliais<\/em><\/p>\n<p>6 apples, peeled, cored, and cut into slices<br \/>\n1 cup flour<br \/>\n1 cup sugar<br \/>\n4 oz. butter<br \/>\n\u00bd tsp. cinnamon<br \/>\nJuice of \u00bd lemon powdered sugar for sprinkling Sift together flour, sugar and cinnamon. Cut butter into the flour mixture until small crumbs form. Arrange the apple slices in prepared baking dish. Sprinkle with lemon juice. Cover apples evenly with the dough crumbs and bake in medium oven (350 \u00b0 F) 35 to 45 minutes. When cooled, invert cake on a platter and sprinkle with powdered sugar.<\/p>\n<p><strong>PUR\u00c9E OF BEETS AND APPLES<\/strong><br \/>\n<em>Burok\u0117liai su obuoliais<\/em><\/p>\n<p>5 to 6 medium beets<br \/>\n2 sour apples<br \/>\n1 Tbsp. bacon fat<br \/>\nSalt and pepper<br \/>\nLemon juice<br \/>\nSugar<br \/>\n2 to 3 Tbsps. sour cream<br \/>\n1\u00bd tsps. flour<br \/>\nPeel beets and apples and grate coarsely, reserving all the juices. Melt bacon fat and add grated beets and apples, together with all their juices. Season with salt and pepper, adding lemon juice and sugar to taste. Simmer, covered, for half an hour, then uncover and reduce liquid, adding sour cream combined with the flour. Let boil up and simmer for a few more minutes. It is excellent with roasts.<\/p>\n<p><strong>APPLES BAKED WITH PRUNES &amp; HONEY<\/strong><br \/>\n<em>Obuoliai kepti su slyvom<\/em><\/p>\n<p>6 firm, tart apples, cored<br \/>\n12 pre-soaked or ready to eat prunes, pitted<br \/>\n6 Tbsps. honey<br \/>\n\u00bd tsp. cinnamon<br \/>\nWater<br \/>\nPlace apples in oven-proof shallow dish. Into the cavity of each apple, put two moist prunes and 1 tablespoon honey. Sprinkle with cinnamon. Add water to cover bottom of dish, about \u00bd inch deep. Bake in preheated oven at 375 \u00b0 for 1 hour, or until apples are tender. These are good served hot or cold.<\/p>\n<p><strong>APPLE SNOW<\/strong><br \/>\n<em>Obuolin\u0117 putel\u0117<\/em><\/p>\n<p>12 cooking apples<br \/>\n\u00bd cup fine sugar<br \/>\n1 tsp. cinnamon<br \/>\n2 egg whites<br \/>\nBake whole unpeeled apples. Cool. Force through sieve or food mill. Add sugar and cinnamon. Place dish on crushed ice, gradually add the egg whites, beat with egg-beater or whip until very fluffy. Spoon into dessert dishes, sprinkle fine sugar on top. Serve at once.
