With your hands, mix butter, eggs, flour, sugar and baking powder until crumbs. Sprinkle half of the crumbs in the bottom of an 11 x 16 inch cookie sheet pan. Shred the apples and toss with \u00be cup sugar and vanilla or lemon juice. Put on dough, then spread rest of crumbs on top. Bake at 350 \u00b0 for 50-60 minutes until brown.<\/p>\n<p><strong>APPLE COOKIES<\/strong><br \/>\n<em>Obuoliniai sausainiai<\/em><\/p>\n<p>1 cup flour<br \/>\n1 tsp. baking soda<br \/>\n1 egg<br \/>\n\u00bd cup sugar<br \/>\n1 tsp\/ vanilla sugar and\/or \u00bd tsp. cinnamon<br \/>\n1 Tbsp. sour cream<br \/>\n\u00bc cup oil<br \/>\nPinch of salt<br \/>\n2 cups apples, cubed<br \/>\n1 Tbsp. lemon juice<br \/>\nIcing sugar to sprinkle<br \/>\nPeel apples, cut into small cubes and sprinkle with lemon juice. Beat egg with sugar, vanilla sugar, cinnamon and salt. Add sour cream and oil and continue beating. Sieve flour with baking soda, add beaten eggs and apple cubes. Cover a baking tray with baking paper. Place tablespoons of the batter on the tray. Bake 15-20 minutes in 180 \u00b0 oven (they should be lovely browned on the top). Cool down and sprinkle with icing sugar (optionally: mixed with ground cinnamon).<\/p>\n<p><strong>APPLE CHEESE<\/strong><br \/>\n<em>Obuolinis s\u016bris<\/em><\/p>\n<p>Bake whole tart apples (do not peel nor core). Force through sieve or food mill. Simmer the pulp slowly in a heavy pot for about an hour, stirring frequently with a wooden spoon. Measure. To each cup of pulp add \u00bd cup of sugar. Bring to a slow boil. Chop fine the rind of one orange, cover with cold water, bring to a boil, pour off the water. Add the rind to the apple pulp, together with \u00bd to 1 teaspoon cinnamon and cloves. Continue stirring and simmering over low flame until done. To test: drop spoonful of mixture on a clean cloth wrung out of cold water. When the mixture does not stick to the cloth, it is done. Pour into a triangular cloth bag (jelly bag); place between two boards with a weight on top, allow to stand overnight or longer. Remove from cloth, place in a very slow oven until surface of cheese is dry. Honey may be substituted for sugar in same proportions.<\/p>\n<p><strong>BREAD AND APPLE CASSEROLE<\/strong><br \/>\n<em>Duonos ir obuoli\u0173 apkepas<\/em><\/p>\n<p>2 cups black bread crumbs (made from fresh bread)<br \/>\n1 cup cranberry juice<br \/>\n6 medium apples, grated<br \/>\n1 cup sugar<br \/>\nCinnamon<br \/>\n2 Tbsps. butter<br \/>\n1 apple, sliced (for garnish)<br \/>\nPreheat oven to 325 \u00b0 . Moisten the bread crumbs with cranberry juice. Mix the grated apples with sugar and cinnamon, to taste. Grease a casserole dish with a little butter, and put in bread and apple mixture in layers. End with a layer of sliced apple on top. Garnish with sliced apple before baking. Dot with remaining butter and bake for about 30 minutes. Lithuanians sometimes serve this dessert with sweetened milk, which is made in the following manner: To two cups of fresh milk, add 1 to 2 tablespoons of sugar and a very thin rind of lemon. Let stand for about one hour and strain. Makes 4 to 5 servings.<\/p>\n<p><strong>APPLE RAISIN BREAD<\/strong><br \/>\n<em>Obuoli\u0173 ir razin\u0173 duona<\/em><\/p>\n<p>1\u00bd cups flour<br \/>\n2 tsps. baking powder<br \/>\n\u00bc tsp. baking soda<br \/>\n1 tsp. salt<br \/>\n1\u00bc tsp. ground cinnamon<br \/>\n\u00bc tsp. ground nutmeg<br \/>\n2\/3 cup brown sugar<br \/>\n1 cup rolled oats<br \/>\n1\u00bd cups grated apple<br \/>\n\u00bc cup raisins<br \/>\n2 eggs<br \/>\n\u00bc cup milk<br \/>\n\u00bc cup vegetable oil<br \/>\nPreheat oven to 350 \u00b0 . Grease and flour an 8\u00bd x 4\u00bd inch loaf pan. In a large bowl, combine flour, baking powder, baking soda, salt, cinnamon, nutmeg, brown sugar, and oats. Add apple, raisins, eggs, milk, and oil. Mix until ingredients are moistened. Put mixture into the greased pan and bake for 55 to 60 minutes or until done.
