It’s apple time, again

APPLE CAKE

1¼ cup butter
¾ cup sugar
2 eggs
2 cups flour
½ tsp. salt
1 tsp. baking soda
2 cups chopped apples (cube-shaped)
1 cup chopped nuts
1 cup chopped dates or raisins
Beat butter with sugar. Add and beat eggs one at a time. Mix flour with salt, baking soda, and baking powder; beat into egg mixture. Add apples, nuts, and dates or raisins. Bake in a greased 9” x 12” x 3” pan at 350 ° F for 40-45 minutes.

APPLE AND PRUNE COMPOTE

1 lb. apples
½ lb. prunes
1 cup sugar
4 cups water
5 cloves, cinnamon, orange peel
Peel apples, cut lengthwise into sections, core, and put immediately into boiling sweetened water. Cook over a low heat, together with all the spices. When apples are done, remove from liquid and put into serving dish. Strain the liquid, add remaining sugar, bring to a boil, and let stand to settle. Cook prunes separately, remove from liquid, and place attractively over the apples. Pour apple syrup carefully over the fruit. Leave out the sediment. Serve cold.

APPLE PUDDING

5 sour apples
1 cup sugar
4 Tbsps. potato starch
4 cups water
Juice of ½ lemon
Wash apples, cut up and cook in water. Force through a sieve. Add sugar and bring to a boil. When it boils, stir in dissolved potato starch, bring to a boil again, and pour into a mold. Serve chilled, with milk or cream.

APPLE UPSIDE DOWN CAKE

Juice of ½ lemon powdered sugar for sprinkling Sift together flour, sugar and cinnamon. Cut butter into the flour mixture until small crumbs form. Arrange the apple slices in prepared baking dish. Sprinkle with lemon juice. Cover apples evenly with the dough crumbs and bake in medium oven (350 ° F) 35 to 45 minutes. When cooled, invert cake on a platter and sprinkle with powdered sugar.

PURÉE OF BEETS AND APPLES

1½ tsps. flour
Peel beets and apples and grate coarsely, reserving all the juices. Melt bacon fat and add grated beets and apples, together with all their juices. Season with salt and pepper, adding lemon juice and sugar to taste. Simmer, covered, for half an hour, then uncover and reduce liquid, adding sour cream combined with the flour. Let boil up and simmer for a few more minutes. It is excellent with roasts.

APPLES BAKED WITH PRUNES & HONEY

12 pre-soaked or ready to eat prunes, pitted
6 Tbsps. honey
½ tsp. cinnamon
Water
Place apples in oven-proof shallow dish. Into the cavity of each apple, put two moist prunes and 1 tablespoon honey. Sprinkle with cinnamon. Add water to cover bottom of dish, about ½ inch deep. Bake in preheated oven at 375 ° for 1 hour, or until apples are tender. These are good served hot or cold.

APPLE SNOW

12 cooking apples
½ cup fine sugar
1 tsp. cinnamon
2 egg whites
Bake whole unpeeled apples. Cool. Force through sieve or food mill. Add sugar and cinnamon. Place dish on crushed ice, gradually add the egg whites, beat with egg-beater or whip until very fluffy. Spoon into dessert dishes, sprinkle fine sugar on top. Serve at once. Gelatine may be added if prepared much in advance before serving.
